How to make an eggplant burger patty

Prepare the ingredients which include eggplant, egg, salt, and pepper to taste, cornstarch, and breadcrumbs.

Using a peeler, remove the skin of the eggplant. Cut the eggplant into small pieces and bring it to a boil in a pan with water. After five to ten minutes, remove the eggplant from the boiling water.

In a bowl, mix the cooked eggplant with the rest of the ingredients. The egg and breadcrumbs will help give the patty its form. Add salt and pepper to taste.
