Home-Based Food Business Idea: Recipe for Grilled Pork and Chicken Isaw

Pinoys are big fans of street food. As a matter of fact, you can easily spot street food vendors almost everywhere, whether at schools, churches, parks, terminals and even in your neighborhood. The tasty inexpensive meals can easily satisfy one’s hunger for less than half the price of a meal served in fast food restaurants.

Considered as the most sought street food in the Philippines, grilled pork and chicken isaw are popular snacks or pulutan among Filipinos. In fact, these local delicacies, along with pork barbecue and grilled pig’s ear are sold in almost every street in the Philippines.

Here’s a simple recipe you can use for your grilled pork and chicken isaw business.

Ingredients for grilled pork isaw:

  • 500 grams pork intestines, cleaned
  • 1 garlic head, crushed
  • 1/2 cup soy sauce
  • 3 pcs laurel leaves
  • 1 tsp crushed black pepper
  • 1/4 cup vinegar

Ingredients for grilled chicken isaw:

  • 500 grams chicken intestines, cleaned
  • 1 garlic head, crushed
  • 1/2 cup soy sauce
  • 3 pcs laurel leaves
  • 1 tsp crushed black pepper
  • 1/4 cup vinegar

Ingredients for vinegar dipping sauce:

  • 1 1/2 cup white vinegar
  • 1 head garlic, crushed
  • 1 pc red onion, chopped
  • 1/2 pc cucumber, chopped
  • 4 pcs chillies
  • 4 pcs calamansi, juiced
  • 1 tbsp fish sauce
  • 1 tbsp white sugar

Procedure:

  1. Put garlic, soy sauce, laurel leaf, crushed black pepper and intestines in a pan and bring to a boil. Add vinegar and reduce the heat to low. Let the mixture simmer, stir then turn the fire off.
  2. Allow it to cool before skewering it on bamboo sticks.
  3. Grill the intestines until brown.
  4. To make the vinegar dipping sauce, combine garlic, red onion, chillies and blend in a blender or food processor. Place it in a serving dish then add calamansi and vinegar. You can also season it with salt, pepper and sugar. You may opt to add chopped cucumber to the dip.
