One of the easiest ways for us Pinoys to beat the summer heat is to eat ice cream.

Usually peddled by street vendors specifically known as “Mamang Sorbetero”, sorbetes is the Filipino variation of ice cream which is uniquely made from coconut milk. It is more popularly known as “dirty ice cream” not because it’s really unsanitary but because it is often sold along the streets, exposing it to pollution.

It is usually served in a small plastic cup, sugar cones, wafter cones or even bread buns and comes in a variety of flavours like mango, chocolate, vanilla, cheese, coconut and ube. Interestingly, an ice cream serving can include different flavors for no extra charge.

Take advantage of the summer heat and try selling sorbetes at the comfort of your home. Here’s an easy sorbetes recipe you can follow.

Ingredients:

  • 1/2 gallon powdered milk
  • 1 to 1/2 gallon coconut milk
  • 1/3 gallon evaporated milk
  • 2 kilo sugar
  • 1/2 kilo corn starch

Procedure:

  1. Mix all ingredients using a mixer or egg beater until the consistency is foamy.
  2. Pour ingredients in a stainless steel pan or boiler. Boil for 15 minutes to kill microbes or bacteria. Allow it to cool.
  3. Add desired flavorings, either real fruit flavors or artificial flavors.
  4. Place inside the freezer for half an hour or until half-frozen.
  5. Remove frem the freezer then mix again using an egg beater or a big wooden spoon. Wait until its consistency becomes a thick mass.
  6. Transfer the contents in a round stainless container then cover.
  7. You can now place it in a wooden push cart and place lots of crushed ice and salt between containers. You may also use dry ice as an alternative.
  8. In 20 minutes, your home-made sorbetes will be ready for serving.

Aside from selling sorbetes to your neighbors, you can also take wholesale orders, say 4 gallons, which customers can serve during parties.
